There’s just something about mornings that I just love! Every morning has the possibility for that ‘fresh start’ & extra hustle hard feel. I definitely haven’t always been a morning person but over the years I’ve without a doubt become one (Big thanks to my early bird boyfriend). I won’t lie though, not all mornings are good mornings! Half the time I am running around like a chicken with my head cut off (per usual) & RUSHING like crazy. Some how time just flys by me in the mornings! That being said, I like to stick with a routine as much as possible to optimize maximum efficiency & less rushing in the AM!

I’ll do my usual shower, hygiene routine, facial ice rolling, throw on a new podcast, & make some green tea- but all that isn’t enough to start my day off right with out the fuel to really f*cking kill it. So I’m very choosy about my breakfasts of choice, especially if I have a long or big work day ahead of me. So I’m sharing not only my healthy, but quick & easy #GirlBoss Monday morning fuel options to give you the energy to kill the tasks ahead of you for the day! These quick breakie eats can take any where from 5-10 minutes to prep & leave you feeling full & energized to take on the day! Plus, they’re ALL healthy options too.

First up! My cinnamon almond oatmeal & fresh fruits! If you’ve ready my morning routines & rituals blog post, you already know this is one of my go to breakfast meals before I start a work day, that I’ll always have if I’m early to work. Mix the desired amount of oatmeal you want with proportioned water ratio, microwave, add cinnamon, chopped almonds, strawberries, blueberries, & even some brown sugar. Oatmeal is known to be filling, so you’ll be able to jump-start your day for a hot min before your lunch meal, not to mention it’s low on calories & takes at least 3 minutes to make! There are so many benefits to oatmeal besides being filling, its rich in antioxidants, fiber, & in so much more! I love adding strawberries & blueberries in particular because they’re low in carbs & help burn fat!

If you have me on Snapchat or Instagram (You should), you constantly see me posting about avocado toast, all the time! I can’t get enough of this sh*t! I can never get tired of it because theres always countless ways to spice it up! If I’m really quick on time, I’ll do a plain avocado spread on wheat toast, add lemon, pepper, chili pepper flakes, & chia seeds! Light & super tasty! If I have enough time, I’ll scramble eggs with bell peppers, spinach, mushrooms, & cheese on top of the avocado toast. One of my newest found loves is an alternative to Lox & Bagel, Lox & toast! Spread cream cheese on toast, add smoked salmon, lemon, avocado, & you’re in mouthgasmic heavenin minutes! I love playing around with different types of quick & easy toast in the morning! I love avocado, lemon, & chia seeds because they’ve all got bomb health benefits! Avocado is known to be a fatty acid that is packed with disease fighting antioxidants, Lemon is a citrus acid known to also have cancer antioxidant fighting benefits, while Chia seeds are known to have a powerful nutritional punch of fiber, antioxidants, protein & so much more! They don’t call it a super food for nothing!

Eggs! Ahh, I do like to think of myself as the breakfast queen & if not breakfast queen, definitely egg queen! As gross as that totally sounds, my eggs are the bomb.com. I started perfecting the prime egg concoctions at a very young age. Around 10 years old I would make my parents breakfast in bed, usually eggs. To be honest, at 10 years old, only God knows what was really in those eggs- But hey, my parents ate it (lol) I do recall using cinnamon in my eggs at one point, like a total experimental middle schooler. But don’t worry, these days my eggs are totally cinnamon & weird sh*t free, & taste amazing! I like to think of this egg recipe as…”throw a bunch of sh*t together, eggs” cause that’s what it totally is. Depending on what ingredients are in the house & fridge at the moment, the recipe will change. My fav is usually: Two eggs, one tablespoon of 2% milk (this makes your eggs nice & fluffy), pepper, sautéed spinach, tomatoes, bell peppers, mushroom, & cheese! Scramble that goodness all up, you’ve got bomb.com eggs in less than 10min. If you’re really on the go, you can turn it into a egg burrito! Take any flour quesadilla, fill it with your thrown together eggs & shit- boom! You’re out the door, egg burrito in hand.

If you couldn’t already tell, I’m crazy in love with avocado’s & the numerous ways you can serve them & add them on to any meal or dish! If you have a little extra time in the AM, you could always whip up a baked avocado egg! Slice your avocado in half, take out the pit, crack a raw egg in the pit dip, sprinkle a little salt, pepper, chia seeds, cheese, pop in the oven on 400 degrees for about 10-15 min or whatever your desired liking of the egg cooking is, & BAM- instant healthy filling flavorfull morning goodness! Or, you could do a remix on my avocado toast & cook an over easy-medium egg & serve it on top of your avo toast! DELISH in minutes! It’s gone as quick as it took to make! & If you couldn’t already notice, I’m more of a savory person in the morning than sweet! I’ll take my breakfast on the savory side & my coffee sweet.

Yes, more eggs! But these are cooler than normal eggs. They’re like meal prepping eggs! So basically, you’ll take your bunch of sh*t thrown together eggs, but instead of pouring it on the pan to scramble up, you’ll pour your mix into a cupcake or muffin tray, bake on 350 degrees for about 20min, & then you’ll have the cutest, on the go, easy to save & prep, egg muffins! These are perfect to make an evening before a big day where you’ll have zero time in the morning, just take one or two of the pre-made egg muffins from the fridge, microwave for 30-50 seconds, & you’re on the go girl! Egg muffin in hand. These are totally awesome for lil kiddos who can’t sit still to eat they’re eggs at breakfast, hand one to your kid in their car seat, & they’ll have their eggs on the go too!
