GGD Recipe: Garlic Lemon Chicken & Veggies Sheet Bake

Recently, I’ve been investing a LOT into my health & intergrading healthier daily & eating habits into my everyday lifestyle & routine. I recently posted a super easy, clean, & healthy garlic lemon chicken + veggies sheet bake on my instagram. The feedback I received & demand for this recipe was crazy! So here it finally is, for the person who wants to start eating cleaner / healthier but still enjoy a tasty meal, which is also super perfect to meal prep, my Garlic Lemon Chicken & Veggies Sheet bake recipe. Enjoy!

Items & ingredients needed:
Chicken breast (I prefer mine already diced to save time cutting the chicken up)
2 lemons
1 zucchini
1 potato
1 bag broccoli/cauliflower mix
Pepper
Garlic powder
Minced garlic
Avocado oil
Pink Himalayan Salt
1 baking sheet
Foil
Oven

Step 1:
Add foil to your baking sheet, pre-heat oven at 400 degrees. Rinse your potato & cut it up into small wedges. Season the potato wedges with avocado oil, pepper, garlic powder, & salt. Place potato wedges on the foiled baking sheet. Once the oven is done preheating, place the sheet of seasoned potato wedges into the oven for 20min.

Step 2:
While waiting for the potatoes to cook, rinse your broccoli, cauliflower, & zucchini. Since up the zucchini into reasonable but size pieces / slices & do the same with the broccoli & cauliflower. Place all the veggies in a bowl. Drizzle avocado oil over the veggies, add minced garlic, & pepper. Shuffle the veggies around in the seasoning so that they are all thoroughly coated.

Step 3:
While still waiting for the potatoes to cook, dice up your chicken breast if it is not already cut. Then add the diced chicken to a bowl, season with avocado oil, minced garlic, & lots of lemon juice (as much as you desire).

Step 4:
Remove the roasted potato wedges from the oven after cooling for 20min at 400 degrees. Next add the seasoned veggies to the pan with the roasted potato wedges. Make sure to evenly distribute the veggies across the pan. Next, & always last, add the seasoned diced chicken breast, in between the potato wedges & veggies. Make sure that the chicken isn’t covered so that it can thoroughly cook threw amongst the veggies & potatoes. Then once all the items are placed evenly on the baking sheet, add lemon slices & squeeze a little lemon (however much you desire) onto everything & put the sheet pan back into the oven at 400 degrees for 25min.

Step 5:

Once the timer for 25min goes off, remove the baking sheet from the oven, let it cool for 5-10min,  it’s ready to serve & enjoy!

This is the perfect dish to put in tupperware for the rest of the week as a guilt free meal prep! It’s literally THAT easy, THAT tasty, & THAT healthy.
